Hi bonichang! That's very careful of you to have noticed. Actually, the correct way to say these words is with 'n.' However, in daily communications, people tend to speak too quikly so that the 'n' sounds disappeared : )

Also, some people pronounced the 'r' in rou and ren as 'l'. Is that permissible?

Well, it is a dialect. You can hear it in some of the southwest part in China. You might also here some people omit the 'r' in words. In northeast China, some people say 'yín' when they mean to say 'rén'. Dialects are so much fun, huh?
