你好(Nǐ hǎo),Alex! 我很好,你呢?(Wǒ hěn hǎo, nǐ ne?) It's been a long time! :) OK, for the sentence "she has a beautiful blue eyes," you can say "她有一双漂亮的蓝眼睛(Tā yǒu yì shuāng piàoliang de lán yǎnjing.)" or "她有一双美丽的蓝眼睛(Tā yǒu yì shuāng měilì de lán yǎnjing.)." "双(shuāng)" means pair. "美丽(měilì)" also means beautiful. I upload an audio, you can listen to the sentence clearly. Have a good day! :)
